Watermelon Feta Salad
Ingredients:

fresh mint leaves (few sprigs to have that minty flavor!)

Corn Cucumber Salad
Ingredients:
boiled corn
cucumber (i usually buy Persian cucumbers)
feta cheese
basil leaves
red bell pepper (optional)
few thin slices of fresh jalapeno! (i love the kick it brings!)
Kale + date salad
Ingredients:
kale
dates
almonds
blue cheese
Homemade olive oil vinaigrette
Tip: If you plan to have salad for lunch the next day, prep the kale by giving it a “massage” with olive oil then put it in the fridge overnight. Massaging kale (yes, they’re high maintenance but very nutritious!) will break down the kale tough structure and easier to chew once you enjoy your salad!
This is one of my favorites around Spring time - your taste buds will enjoy the sweet taste of dates , the saltiness of the goat cheese and the tart lemon olive oil vinaigrette altogether!
Honeydew Mint with a Kick Salad
Ingredients:
cubed honeydew
pine nuts (another favorite nuts to add in my salad!)
mint
thinly sliced fresh jalapeno
1/2 teasspoon fresh lemon juice
Drizzle in extra virgin olive oil and lemon juice, dash of kosher salt. Enjoy!
