Caramel Chex Mix

When you have too much mixed nuts from the holidays and you don’t know what to do with them - make caramel chex mix! Ideal for snacking - these are so addicting, you’ve been warned!

Ingredients

  • 3 cups Corn Check (plain one, it’s gluten free)

  • 1 cup peanuts ( used Virginia salted peanuts)

  • 1 cup mixed nuts + dried fruits (used Trader Joe's Bazaar Basket Snack Mix)

    Mix all of the above in a big bowl. You can substitute for pretzels and any nuts of your choice!

Boil butter and brown sugar, keep stirring until they’ve blended together (~3 minutes) . In parallel, preheat over to 350 degrees.

  • 1/2 cup butter

  • 1/2 cup brown sugar

Pour the caramelized sugar+butter to the cereal mixture. Toss to coat.

Line baking pan with either greased foil OR parchment paper. Spread the cereal mixture on the pan. Bake it for 6 minutes.

Done! Let it cool and don’t be tempted to try if they’re fresh from the oven & still hot! (i know you will do it - these are way too yummy!!!)


Dark Chocolate Dipped Strawberries

Ingredients:

  • fresh strawberries (dozen)

  • 2 cups of semi sweet/dark chocolate morsels (i use Guittard or Ghirardelli):

Melt the dark chocolate in a double boiler and stir occasionally until smooth. OR microwave method (i use it !). Microwave at half power, for 1 minute, stir and then heat for another minute or until melted.

Using toothpicks, dip the strawberries into the chocolate mixture and make sure they’re well coated.

Lay it down on the parchment paper. Put it in the freezer for 10 minutes.

Enjoy!


Prosciutto Wrapped Dates

Ingredients

  • Feta cheese (or if you prefer blue cheese or goat cheese - tried them all!)

  • Medjool dates (pitted)

  • Prosciutto di Parma, (cut into long strips)

  • Toothpicks (NOTE: make sure you soak in water for 10 minutes, it’s going to the oven!)

    Stuff each date with cheese then wrap in prosciutto then secure with toothpick.

    Preheat the oven to 350°F. Line a baking sheet with aluminum foil.

    Bake until the cheese is soft and the prosciutto looks crisped/caramelized! (~15 minutes)

    Best enjoyed with wine or cocktails!


Simple Veggies Crudite

Ingredients

  • veggies of your choice

Yogurt Dip

  • 1 teaspoon each (dill, onion powder, garlic powder & parsley as seen on the pic)

  • salt (eyeball, taste test!)

  • optional but ideal - fresh mint leaves
