Easy Peasy Pancit (Filipino)
Filipino pancit in 20 minutes! Finally nailed down the recipe with simple and less ingredients as cooking this dish requires a LOT of steps, chopping, prepping, etc. Early pandemic, i was craving for it and when i’d get it Doordash-ed, i was never satisfied with my order (either too greasy, not too flavorful or something else).
For those who haven’t tried this noodle dish, think of it as the cousin of Chinese Lo Mein. There are usually lots of variation to how Filipinos cook this dish - from the noodles they use to the numerous veggies and meat you can add to it. I love to keep mine simple, quick to cook and still attaining the delicious taste of this popular Filipino staple.
Noodles: Use half of the bag for this recipe (pic below)
Serving size: Good for 4 or more
Veggies
1 small sliced red bell pepper
1 cup of sliced green beans
2 cloves of garlic (for sautéing) or 1 shallot
Meat
1 cup of shredded rotisserie chicken (store bought!)
1 tablespoon of bacon bits/pancetta (this is for additional umami)/optional
Also
2 tablespoons oil (olive oil, coconut oil or any will do)
2 tablespoons of soy sauce
1 tablespoon of fish sauce
1.5 cup of chicken broth (store bought)
Noodles Prep: (half of the bag)
Soak in water for 10 minutes
Drain, Set aside
Instructions
Heat your pan/wok , add 2 tablespoon of oil (i use coconut oil!)
Add bacon bits (optional) once hot, then add garlic (until semi-brown)
Add your veggies green beans + bell pepper + soy sauce. Sautee for 2 minutes.
Add chicken broth (1 cup) and shredded chicken
Add noodles. Mix it all up
Adjust fire (medium to low)
Keep mixing everything until it soaks all the liquid broth
: Add 1 teaspoon of fish sauce (additional umami)
6. Serve with fresh slice of lemon!
Kitchen Pantry Staples
Soy sauce (use Kikkoman if you do not have access to Silver swan Filipino soy sauce)
Oil, use vegetable oil or coconut oil (I prefer coconut oil!)
Thai Fish Sauce (optional to use but I like to add for additional flavor!)
Chicken Broth ( some use water, I like to use broth for more flavor!)
