Lugaw/Porridge
Early pandemic (~2020), I wasn’t craving for this or anything however with all the IG postings of pics and videos everywhere, thought I’d give it a go. After a few iterations, various ingredients and substitutions, found a way to easily prep and make this comforting dish!
Lugaw is the Filipino term for rice porridge. It’s a very popular comfort food best enjoyed on a cold rainy day or for breakfast. There are a lot of variations to this dish (some use sticky rice, regular rice or both), often paired with tofu or meat, anyone can get creative with toppings whatever their tastebuds crave!
Ingredients
1 1/2 cup cooked rice
1 tablespoon chicken bouillon
salt and pepper
lemon
fresh ginger (1/2 teaspoon minced or use the ginger paste shortcut)
cilantro OR green onions (toppings)
chili oil or crunchy garlic chili oil
optional: eggs (soft boiled eggs or store bought preserved duck eggs)
optional: chicken strips (store bought rotisserie chicken )
Let’s cook!
Add 3 cups of water + cooked rice to your pot.
Once it starts boiling, add chicken bouillon and ginger. Stir so all ingredients are combined.
Simmer for 20 minutes. Check if it’s the right rice consistency for you ( i like mine very soft).
Serve with slice of lemon, strips of ginger, cilantro (or green onions), chili oil for kick and dash of salt and pepper.
